Chocolate Blackberry Sandwiches

I love these cookies, but I only make them once in while as they are lots of work. They are the perfect refrigerator cookie. They have great chocolate flavour, mixed with real blackberries. Not overly sweet, but are quite decadent. My favourite combination! 

Cookie Recipe

• 3 Cups Flour
• 1 Cup Cocoa Powder
• 1 Teaspoon Cinnamon
• 1 1/2 Cups Butter
• 2 Cups Sugar
• 2 Eggs
• Sprinkles For Topping

1. Mix butter and sugar together, then add the eggs.
2. Add in flour, cocoa powder, and cinnamon.
3. Wrap dough in plastic wrap and refrigerate for at least an hour.
4. Once chill, roll out dough and use your favourite cookie cutter.
5. Heat oven to 350 degrees and bake for 9 minutes.
6. Let cool before icing, and storing in the refrigerator. 

Blackberry Icing

• 1 1/2 Cups Fresh Blackberries
• 8 Ounces White Chocolate
• 1/3 Cup 35% Cream

1. Melt the white chocolate, then slowly add the cream, mixing with an electric mixer.
2. In a blender reduce the blackberries to juice.
3. Then using a sieve to get rid of the seeds, add the juice to the white chocolate mixture. Mix well.
4. Refrigerate for at least an hour to harden the icing before creating the sandwiches.
