Salmon Cakes

Dinner Set
I really enjoy these little salmon cakes with some sweet potato fries. A great summer dinner, and a little something different to do with fish. 

Ingredients:
  • Wild salmon fillets
  • Red pepper
  • Onion
  • Fresh Thyme
  • Garlic, Salt, Pepper
  • Bread crumbs
In a food processor mix everything together. Then roll into small patties. The amounts will depend on desired taste and how much salmon you are cooking. For two, I did two small salmon fillets, a quarter of a red pepper, 1/4 cup chopped onion, 3 to 4 sprigs of thyme, pinch of each garlic, salt, and pepper. Then I added the bread crumbs until everything stuck together well without being too dry. 

For cooking you can either pan fry or BBQ. For pan fry add a bit of oil or butter and cook on each side for 3 to 5 minutes. For BBQ grill on each side for 3 to 5 minutes. Nice and simple.
Summer Dinner
I served my salmon cakes with oven baked sweet potato fries. Just simply cut a sweet potato into fries and toss with salt, pepper, chili powder, and garlic, and a dash of olive oil. Places fries on a baking sheet and cook at 425 degrees for 20 minutes. 

I also served them with lemon slices and mayo, which was mixed with lemon juice and basil leaves used as a dip for both the salmon cakes and fries. It was delicious!
