Strawberry Cupcakes/Muffins

Over the weekend I make some strawberry cupcakes/muffins! I say they are both cupcakes and muffins because they are sweet like cupcakes, but I prefer them without icing, so it's a bit more like eating a muffin. These are great to have as a little dessert, as they are made with real strawberries and are nice and sweet. Such a great treat!

How To Make

Makes 12 Muffins

• 8 Tablespoons of butter
• 1 Cup all purpose flour
• 1/2 Cup Coconut flour
• 1/2 Cup buckwheat flour
• 1/2 Cup brown sugar
• 1/4 Cup white sugar
• 4 Eggs
• 1 Teaspoon vanilla
• 2 1/2 Teaspoons of baking powder
• 3/4 Cup of blender strawberries
• 1/8 Cup milk

1. Mix together the butter and sugars.
2. Then add the eggs, and the vanilla.
3. Blend the strawberries together in a bender (doesn't have to be smooth).
4. Add the flours and baking powder, alternating with adding the strawberries and milk.
5. Once everything is mixed together, spoon out into a muffin pan. You can either use muffin paper liners or butter the pan.
6. Set the oven to 350 degrees and cook for 20 - 25 minutes. 
7. Let cool and enjoy!
